Overthinking on the Road

My family and I are road trippers. We have driven from Texas to the east coast. We’ve hit the highway from home sweet home to California. This summer, however, we wanted to explore some of America’s national parks, so we jumped in the car and drove to Great Sand Dunes National Park, the Royal Gorge, and Pike’s Peak in Colorado. We detoured to South Dakota and saw four former presidents at Mt. Rushmore. We ventured to Montana and took in Glacier National Park.

Hawaiian Dream Cake

INGREDIENTS … • 1 box yellow cake mix … • 2/3 cup oil … • 1 - 11 ounce can mandarin oranges and juice … • 4 eggs … Combine all ingredients. Beat at medium speed for three minutes. Bake in four layers at 350 degrees for 20 to 25 minutes. … Frosting … • 1 large can crushed pineapple with juice … • 1 small box instant vanilla pudding … • 1 eight ounce container of whipped cream … • 1 cup frozen coconut … Mix dry pudding with pineapple. Add whipped cream and coconut. Spread between layers of cake and on top. Keep refrigerated. … Note—Beautiful with cherries on top.

Strawberry Shortcake Fluff

INGREDIENTS … • 1 3.4 ounce box of instant strawberry pudding mix … • 1 cup milk … • 1 8 ounce container Cool Whip … • 1 1/2 cups mini marshmallows … • 3 cups angel food cake cut into cubes … • 2 cups diced strawberries … Whisk together the pudding mix and milk until dissolved and the pudding thickens. … Gently fold in the Cool Whip until it is all mixed together.

I was so focused on all the “last times,” that the thought of moving five hours away had slipped my mind. Sure, I would think about it occasionally, but the reality of it did not actually set in until I finished my summer job working at Williams Memorial Day School.

Punch Bowl Cake

… INGREDIENTS … • 1 sheet cake baked your favorite way … • 1 large package of instant vanilla pudding … • 1 can of cherry pie filling … • 1 large can crushed pineapple … • 1 12 oz. package of coconut … • 1 16 oz. whipped cream … Divide everything in half. … Crumble half sheet cake in the bottom of a large punch bowl. Spread half of pudding over cake. Add half of other ingredients in the order given. … Repeat for a second layer. … Garnish with cherries or coconut … Refrigerate … As the summer months wind down, a great dessert can keep them cool and sweet.

I’ll never forget the day John Henry entered the world. As most new parents are, we were nervous and excited about meeting our newborn son. John Henry’s arrival was anxiously awaited, as our arms had been left empty almost exactly one year prior. August 27, 2009, Fred and I thought we were going to be first-time parents to a healthy baby boy. Unfortunately, life took a different route after a long 39 weeks, and instead of leaving the hospital with a healthy baby, we left to attend our son’s funeral. … Reflecting twelve years later, it is surreal how his birthday unfolded.

Back to School

As someone who has basically been in school their entire life minus two years, I have a love-hate relationship with back to school time. I love it because the fresh new year full of possibilities has always excited me as a student-turned-teacher. I love meeting my new students each year! Summer is my favorite season because I love being outdoors and spending time in the sun! I’m always hesitant to give that up plus getting back into a routine each day is always difficult. Although, by the end of July I’m almost always starting to get bored and am ready to get back into the swing of things.

A Sarine Thought… or Two

And They’re Off… … It is hard to believe that another summer has come and gone. The school supplies have been purchased and soon, students and parents will meet the new teacher(s) who will be the main educational influence in their lives for the next nine months. It is thrilling for some, terrifying for others, but good for all. It’s time to go back to school. … When Jack started kindergarten, my focus was solely on him throughout each day. Would he love school? Would he hate it? Would he make sweet friends? Would he be able to make it for seven whole hours without seeing my face?
