Cool Peach Pie

INGREDIENTS

  • pie crust
  • 1 1/2 C sugar
  • 3 T cornstarch
  • 1 C water
  • 4 T peach Jell-O
  • 8 oz. cream cheese
  • 4-5 peaches 
  • whipped cream

Bake a deep-dish pie crust and let cool. (Pie crust recipe available at foodnetwork.com)

Mix in a saucepan: 1 cup sugar, 3 tablespoons of cornstarch, 1 cup of water. Boil until thick and clear. Add 4 tablespoons of peach Jell-O and let cool.

Mix: ½ cup of sugar and 8 ounces of cream cheese. Cream together and spread over cooled pie crust. 

Peel and thinly slice 4 or 5 fresh peaches. Add to cooled Jell-O mixture and pour onto the cream cheese layer.

Cover with whipped cream and refrigerate 4 to 5 hours.
