Coffee Pots, Baby Gates… and GrandparentsYou know those coffee pots that have a timer you can set the night before? We have one and it brings me such joy. I make the coffee each night before I go to bed and set a timer for it to brew at 6:30 every morning. It’s as if I have a little gift greeting me each morning, smelling lovely in its carafe fullness, saying, “Good morning, Liz. I hope you slept well. Here, I made this for you. Pour yourself a cup and let’s do this thing.” I don’t realize how much I love it until it’s broken, or I fail to set the timer and wake up to an empty pot.

Whether it’s right outside the stadium or from the comfort of your own home, it’s time to cheer on your favorite team! Half of the fun of football season is tailgating. Your set up can be as simple or as elaborate as you like! I’ve gathered a few items that will get your tailgate party off to great start.


Lemonade Icebox Pie

INGREDIENTS … • 1 - 8 ounce cream cheese, softened … • 1 can (14 ounces) sweetened condensed milk … • 3/4 cup thawed lemonade concentrate … • 1 - 8 ounce container whipped cream … • yellow food coloring (optional) … • 1 graham cracker crust (recipe available at allrecipes.com) … In a large bowl, beat cream cheese and milk until smooth. Beat in lemonade concentrate. Fold in whipped cream and, if desired, food coloring. Pour into prepared crust. Cover and refrigerate until set. … As the summer months wind down, a great dessert can keep them cool and sweet.

Overthinking on the Road

My family and I are road trippers. We have driven from Texas to the east coast. We’ve hit the highway from home sweet home to California. This summer, however, we wanted to explore some of America’s national parks, so we jumped in the car and drove to Great Sand Dunes National Park, the Royal Gorge, and Pike’s Peak in Colorado. We detoured to South Dakota and saw four former presidents at Mt. Rushmore. We ventured to Montana and took in Glacier National Park.

Hawaiian Dream Cake

INGREDIENTS … • 1 box yellow cake mix … • 2/3 cup oil … • 1 - 11 ounce can mandarin oranges and juice … • 4 eggs … Combine all ingredients. Beat at medium speed for three minutes. Bake in four layers at 350 degrees for 20 to 25 minutes. … Frosting … • 1 large can crushed pineapple with juice … • 1 small box instant vanilla pudding … • 1 eight ounce container of whipped cream … • 1 cup frozen coconut … Mix dry pudding with pineapple. Add whipped cream and coconut. Spread between layers of cake and on top. Keep refrigerated. … Note—Beautiful with cherries on top.

Gig ’Em!

College… I knew it was coming, but throughout my senior year, I didn’t think it would ever really be time. I was so focused on all the “last times,” that the thought of moving five hours away had slipped my mind. Sure, I would think about it occasionally, but the reality of it did not actually set in until I finished my summer job working at Williams Memorial Day School.

Strawberry Shortcake Fluff

INGREDIENTS … • 1 3.4 ounce box of instant strawberry pudding mix … • 1 cup milk … • 1 8 ounce container Cool Whip … • 1 1/2 cups mini marshmallows … • 3 cups angel food cake cut into cubes … • 2 cups diced strawberries … Whisk together the pudding mix and milk until dissolved and the pudding thickens. … Gently fold in the Cool Whip until it is all mixed together.

Punch Bowl Cake

INGREDIENTS … • 1 sheet cake baked your favorite way … • 1 large package of instant vanilla pudding … • 1 can of cherry pie filling … • 1 large can crushed pineapple … • 1 12 oz. package of coconut … • 1 16 oz. whipped cream … Divide everything in half. … Crumble half sheet cake in the bottom of a large punch bowl. Spread half of pudding over cake. Add half of other ingredients in the order given. … Repeat for a second layer. … Garnish with cherries or coconut … Refrigerate … As the summer months wind down, a great dessert can keep them cool and sweet.
